Good For Your Health

Goat meat is 50%-65% lower in fat than similarly prepared beef, but has a similar protein content. The US department of Agriculture also has reported that saturated fat in cooked goat meat is 40% less than that of chicken, even with the skin removed.

For those cooking with goat meat for the first time, we would like to offer the following tips. 

Don't let the health benefits of Chevon fool you.  Goat meat is a culinary treat!  And, cooking with Chevon is both easy and enjoyable.  As a fine textured and mild tasting red meat, Goat meat makes an excellent choice for your everyday meals.  You do not have to learn new cooking techniques or discover new dishes to enjoy goat meat.

Goat is typically butchered at a young age. You will find it packaged in familiar cuts such as: steaks, roasts, chops, tenderloin, ground and stew pieces.  

Due to goat meat's lean composition, when using dry cooking methods: grilling, rotisserie, broiling, or roasting, begin with high heat to quickly brown the surface and seal in the flavor.  Then, lower the heat to finish.   Monitor the cooking process to avoid over cooking the meat.  When using moist heat methods: braising and stewing, keep the meat covered in liquid and use low slow temperatures.   Use your favorite marinade with less tender cuts.  Allow the marinade to work for 12 to 24 hours.   Marinating is a great beginning to outstanding kabobs and rice dishes.  Lastly, do not underestimate the simplicity goat offers.  Goat burgers on the grill, goat stew, the classic “crock pot roast” or your favorite meat loaf recipe are excellent ways to introduce yourself and your family to goat meat.
